Ingredients

  • 4 cups frozen mixed berries (thawed)
  • 1 cup sugar
  • Juice of 1 lemon
  • 1 cup butter at room temperature
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 2 cups flour
  • 1 teaspoon baking powder
  1. In a large bowl mix the berries with 1/4 cup of sugar and the juice of one lemon.

  2. Transfer into a cast iron skillet (you can use an oven safe dish if you don’t have a cast iron skillet)

  3. In a bowl, mix the flour with the baking powder and salt, set aside.

  4. In another bowl, cream the butter with the 1/2 cup of sugar.

  5. Add in the egg mixing well.

  6. Add in the vanilla and milk.

Do you ever use cornmeal in your recipe? I see it in a lot of these berry pies and desserts. I was wondering if you drain your berries before using them in the cobbler. I like that you made a recipe with the cast iron skillet because it is so fun to use.
