Homemade Keto Ice Cream Bites
"Ice cream bites are so quick and easy. All you need to do is form your ice cream and coat it in chocolate. That’s it! It only takes a few minutes of time and they are so delicious! I can never decide between grabbing one of these or a Keto oreo! And when you use keto-friendly ice cream, these bites are only about 5 grams of carbs each. So you can have 1 or 2 to satisfy your sweet tooth without feeling any guilt! Make a big batch to keep in your freezer because you won’t be able to resist these ice cream bites!"

Ingredients
- 1 cup keto ice cream
- 4 ounces sugar-free dark chocolate
- 2 tablespoons coconut oil

To make these keto friendly ice cream bites, start by taking your ice cream out and letting it sit until it’s slightly melted and soft enough to form.

Stir the ice cream and begin scooping it into a silicone mold, making sure it’s packed well in the mold.

Fill all the cavities in the mold and scrape the top to make sure it’s even.

Place the mold on a baking sheet and put it in the freezer for at least 1 hour.

While the ice cream sets, melt your chocolate by placing it in a microwave-safe bowl with the coconut oil and microwaving it for 30-second increments. Stir after each time.

Continue to heat and stir your chocolate until it’s completely melted and smooth.

Remove the ice cream from the freezer and quickly pop each bite out of the mold.

Dip each bite into the melted chocolate, coating it completely, and let any excess chocolate drip off.

Place the chocolate-coated ice cream back on the baking sheet.

Repeat with the remaining ice cream bites and place the tray back in the freezer for about 15-20 minutes so the ice cream can set.

When all the bites are coated and set, they are ready to enjoy or store!
