Whole-Wheat Blueberry Buckle
"Buckle cake is topped with soft fruit and crumble which makes the cake batter 'buckle' under their weight in a wavy manner. I guess blueberries are on the lighter side so mine didn't buckle too much. All the same, blueberry is the most common buckle and that is my firm favourite. The cake is not too high in sugar, it uses wholemeal flour and the addition of the quinoa flour in the crumble topping makes it all a bit healthier than most desserts."

What is demerara sugar? I can't say that I have heard of it before now. I want to make your recipe because it reminds me of fresh desserts that my grandmother would make for me when I was little. She would have me gather all the stuff for her and she would sit the ingredients on the hassock in front of her and mix it all up and tell me how to prepare the pans and such to get it in the oven.

I've never heard of buckle cake before! I'm always looking for healthier dessert recipes so that I don't feel as guilty eating them, so I'm excited to try this!
