Mmmm, coconut butter cream frosting! I know my husband will go crazy over this recipe and insist I put it on everything and anything you can add frosting too. He will likely be after me to find a pineapple cake recipe to go with it too. 2 to 4 cups of confectioners sugar seems like an awfully big gap in the amount needed. I guess we just keep adding until we are happy with the consistency.
