This new take on the traditional funnel cake is still special enough to serve at almost any occasion, including birthdays, game watch parties, and even an impromptu party with the neighbors. The individual servings of this dessert make it easy to serve, too. We used Nutella, raspberry jam, and caramel sauce as toppings, but you can certainly use whipped cream or Cool Whip, chocolate syrup, sprinkles, or even ice cream as topping options. Simply set out the mini funnel cakes on a pretty platter as soon as they are finished frying, and watch as they disappear like magic!

Ingredients

  • Batter
  • 2 cups milk
  • 1 egg
  • 2 teaspoons vanilla
  • 6 tablespoons unsalted butter, melted
  • 2 cups flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon kosher salt
  • 2 tablespoons sugar
  • Vegetable oil for frying
  • Confectioners’ sugar for sprinkling on top
  •  
  • Dipping Sauces
  • Nutella
  • Raspberry jam
  • Caramel sauce

Instructions

  1. In a medium mixing bowl combine the milk, egg, vanilla and melted butter, whisk until combined.

  2. Add in the flour, salt, baking powder and sugar and mix well.

  3. In a deep frying pan on high, heat about ½-1 inch of vegetable oil.

  4. After the oil is very hot, lower to medium heat.

  5. Using a small measuring cup carefully drop the batter into the oil and cook for 2 minutes until cakes are golden, gently flip over and fry the other side.

  6. Place the fried funnel cake bites onto a baking sheet lined with paper towels.

  7. Sprinkle with confectioners’ sugar and serve with your favorite dipping sauces or whipped cream.

These were so GOOD! The raspberry jam sauce was just a little too sweet for me, though
