I grew up with my grandma making apple cobblers (and blackberry cobblers…and peach cobblers…) throughout the summer and fall and well into the winter, too.

"Over time, I’ve updated her recipe to include oats in the topping because I love the rustic flavor toasted oats bring to the cobbler once it’s baked. So I’m thinking these Apple Cobbler Cheesecake Bars would work with all sorts of fruit. However, given that we’re in the middle of autumn, bring on the apples.
