What a great way to make a healthier version of pumpkin pie and still satisfy everyone's cravings, right? I can see serving these pumpkin dishes up year round because it is different than traditional pumpkin pie. I bet my family would not mind it a bit. Plus, I can keep dessert a little healthier.

The crust to me is the best part, but this recipe looks reaaaally good and I might have to embrace the crustless life for the sake of this recipe.
