Easy Oatmeal Almond Cookies
"This is a quick and easy almond cookies recipe you can make when you’re short on time and guests are on their way. Hot and fresh cookies are always a hit. You can tweak these Oatmeal Almond cookies by adding some ground cinnamon. A pinch of ground nutmeg would also be great in this recipe. Adding three tablespoons of almond milk will make them chewier. These cookies would be lovely with a sweet drink. Our Cafe au Sin recipe would be a good pairing."

Ingredients
- 2 cups Almond Flour
- 1 cup Quick Oats
- 1 cup sugar
- 1 teaspoon Almond extract
- 3 egg whites
- 1 cup sliced almonds
Instructions

Preheat oven to 350 degrees Fahrenheit

Cover cookie sheets with parchment paper

Lightly beat the egg whites for 2 minutes

In a large bowl, combine Almond Flour, Sugar, Oats, Almond extract

Add the beaten egg whites and mix to form a paste.

Create 24 1-inch balls of dough

Pour sliced almonds into a bowl.

Dip each ball of dough into the slice almonds.

Place the balls on the parchment paper and gently flatten each ball

Bake for 15 minutes.
