These look really good, and it is so nice to have a gluten free option. I was wondering if someone who has made these could let us know what the texture of the cookie is like. Is it light and fluffy, or hard and dry? My youngest is supposed to avoid gluten and has taken a shine to chocolate chip cookies made with rice flour because they are so light and fluffy. I wonder if rice flour could be used in place of almond flour in this recipe.
