They are super easy to make and the lemon icing drizzle and the sprinkles are totally optional, although a nice touch both. I think you can try and use cream cheese instead of ricotta, but the result will not be quite as tender and soft. This recipe makes about three dozen cookies; halve the ingredients if you like - but you won't want to!"
