Zesty Orange And Almond Cake
"Do you love oranges? Then bake a beautiful orange and almond cake recipe. A gluten-free dessert for those who are gluten-sensitive but still want to eat a tasty cake. This cake has unique texture compared to ordinary almond cakes. And it has also a subtle taste. You could try substituting ground hazelnuts or macadamia nuts for a nuttier cake while still retaining the wonderful flavors of the oranges. Almond meal is also a perfect substitute for the regular almond flour. "

Ingredients
- 2 large oranges
- 6 large eggs
- 9 oz almond flour
- 8 oz granulated sugar
- 1 tsp baking powder
- 1 tsp lemon zest
- 1/4 cup all-purpose flour
- 3 tbsp melted butter
Instructions

Place the oranges in a large saucepan or stockpot.

Cover the oranges with water.

Bring the water to a boil and reduce it to simmer for 1 hour.

Remove the oranges from the pan to cool.

Preheat the oven to 350 degrees Fahrenheit.

Brush a 9-inch springform tin with melted butter; and dust with all-purpose flour.

Chop the cooked oranges and discard any pits and seeds.

Place the chopped oranges and eggs in a food processor and process until combined.

In a large bowl, combine almond flour, sugar, lemon zest, and baking powder.

Then, whisk in the egg-orange mixture until evenly mixed.

Pour the batter into the prepared springform tin.

Bake in the oven for 50 minutes at 350 degrees Fahrenheit.
