Sock It To Me Cake
"It’s time to bring the Sock It To Me Cake back! I’ve always loved a good pound cake, and there are plenty of pound cake variations out there. This one deserves a spot in the list! This cake is essentially a vanilla pound cake combined with a cinnamon-pecan coffee cake – what’s not to love about that?? So pour yourself a mug of coffee, slice a piece of this cake and enjoy! While the original 1960’s version of this cake used a box of cake mix, I prefer to bake from scratch. (Don’t get me wrong – there are definitely still times when I appreciate a good boxed cake mix!) This pound cake features both sour cream as well as vegetable oil. It’s a bit unusual to see both of these in the same recipe, but I’m a fan. The cake is moist and flavorful by itself – and that doesn’t even take into account the ribbon of cinnamon-pecans that runs through the middle!"
