Pineapple Coconut Cake

- 1 teaspoon Coconut Extract
- 1 teaspoon Vanilla Extract
- 1/2 cup Cream of Coconut
- 2 cups All Purpose Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 3/4 cup Milk
- 2 large Egg Yolks
- 1 cup Crushed Pineapple
- 1/2 cup Granulated Sugar
- 1 tablespoon Lemon Juice
- 1/2 cup Unsalted Butter
- 1 cup Salted Butter
- 8 ounce Cream cheese
- 1 teaspoon Vanilla Extract
- 3 cup Powdered Sugar
- 4 tablespoon Heavy Whipping Cream
- 2 large Eggs

Preheat the oven to 350°F. Spray three 7” round cake pans with non-stick baking spray and line the bottoms with parchment paper.
