Coquito Cupcakes with Coquito Whipped Cream Icing
"If there’s one drink that just screams the holidays to me, it’s Coquito. Coquito is a Puerto Rican Coconut Nog that is traditionally made around the holidays. Think eggnog without the egg and plenty of delicious coconut flavor. Oh and plenty of rum. Although, I’ve been known to make a rum free version as well for the kids to enjoy as well. It’s tradition for me to make every year. A few years ago we were sitting around in my kitchen when I decided to get a little creative. I whipped up these Coquito Cupcakes on a whim and they were devoured in minutes."
