Easy Pumpkin Eclair Cake
This Easy Pumpkin Eclair Cake is a super simple, creamy pumpkin dessert that is an ideal fall treat. If you're preparing something for your family's Thanksgiving dessert table, this no bake dessert recipe can save you the hassle of making a traditional pumpkin pie. Made with layers of graham crackers and pumpkin mousse, this dessert is so tasty and so easy to make that your Thanksgiving guests are sure to ask for the recipe.

Ingredients
- 8 ounces cream cheese, softened
- 1/4 cup whipping cream
- 1 cup powdered sugar
- 1 cup canned pumpkin (see note)
- 1/2 teaspoon pumpkin pie spice
- 2 (8-ounce) tubs frozen whipped topping, thawed
- 3 sleeves graham crackers
- 1 cup mini chocolate chips
Instructions

Place cream cheese into mixer bowl and whip until smooth, then add cream and continue to whip 2 -3 minutes until smooth and fluffy. Gradually add the powdered sugar and spice. Scrape down the sides of the bowl, then add one tub of whipped topping and continue to beat 2 minutes until completely smooth.

Place a layer of whole graham crackers over the bottom of a 9 x 13 casserole dish, breaking one or two to fit into the corners. Top with another layer of crackers.

Spoon about 1/3 of the pumpkin mixture on top, smoothing evenly to the corners. Spread with 1/3 of the second tub of whipped topping, again smoothing evenly. Sprinkle with about 1/3 of the chocolate chips. Repeat these layers of double layer of crackers, pumpkin mixture, whipped topping and chocolate chips twice more, ending with a sprinkle of the chips.

Cover with plastic wrap and chill overnight or several hours before cutting to serve.

I really liked that this dessert didn't have an overwhelming pumpkin flavor to it. It was nice and light, and the chocolate chips on top were a nice bonus!

Not gonna lie, I definitely went back for seconds of this. But it was so light that I didn't really feel guilty! I love pumpkin desserts, and this was a little something different from pumpkin pie.

This dessert was DELICIOUS! It was pumpkiny without being overwhelming. It had a great texture and the little chocolate chips on top were a great touch. Definitely would recommend!

This was such a yummy fall treat - the pan was empty in less than an hour! I love that it's such a sweet pumpkin dessert without too much spice. Plus, it was super light. I wish I had gone back for seconds while I had the chance!

OMG I have found my new favorite way to eat pumpkin! The creaminess of the filling, the fabulous pumpkin flavor, and the contrasting texture of the chocolate chips on top make this possibly one of my favorite dessert recipes EVER. Pumpkin or otherwise. I could seriously eat half the pan, it's that good!
