Amish No-Bake Cookies

From the blogger: "These Amish No Bake Cookies are a rich combination of chocolate, peanut butter, and oats — and there’s no need to turn on your oven! It’s a recipe that’s near and dear to our hearts, and a family-favorite dessert that we have enjoyed for years. The recipe originally came from our former babysitter, Rebekah, who helped raise each of my boys from the time that they were infants. Rebekah’s family lives on the dairy farm just up the road from our house, so she started taking care of the kids when she was a teenager and could ride her bike to our house! I was still working full time back then, so Rebekah came to the house on a daily basis and quickly became an integral part of our family.
"Back in 2014, when Casey was turning three, Rebekah and her sister Catherine invited the kids to their farm to spend a morning watching their brother milk the cows, meeting the chickens, harvesting sugar snap peas, and picking mulberries. The boys obviously loved every minute of it, but the true highlight was when the girls brought out Casey’s birthday treat: a plate full of these chocolate peanut butter no bake cookies. Oh my goodness…you’ve never seen such happy children! That first batch disappeared within a matter of days, so of course I begged Rebekah to share the easy recipe with me right away.

Anytime I can make a sweet treat that is "no-bake", I'm all in. These Amish No-Bake Cookies are so easy to make, and I always have the ingredients on hand so I can whip them up on a moments notice. The real bonus for me is that they combine chocolate and peanut butter, one of my favorite flavor combinations. The recipe didn't specify, but I used crunchy peanut butter and it was great.

Yum! This kind of cookie always reminds me of my grandma. She brought them to our cottage many years ago and we ate them in her camper. It was so fun, and I'm glad I now have the recipe too!
