  • 175 grams plain flour
  • 1 teaspoon fine salt
  • 2 teaspoons mixed spice
  • 180 grams butter at room temperature
  • 180 grams soft light brown sugar
  • 3 eggs
  • The zest of 1 lemon and 1 orange
  • 1 tablespoon golden syrup
  • 50 grams glacé cherries, halved
  • 50 grams mixed peel apricot jam to brush over the cake
  • For the Icing:
  • 30 grams sugar
  • 25 grams butter
  • 20 grams lemon juice
  • 110 grams powdered sugar
