- For the Cake:
- 5 tablespoons milk

- 150 grams raisins
- 150 grams sultanas
- 40 grams brandy, vin santo, or white rum
- 50 grams bleached almonds
- 175 grams plain flour
- 1 teaspoon fine salt
- 2 teaspoons mixed spice
- 180 grams butter at room temperature
- 180 grams soft light brown sugar
- 3 eggs
- The zest of 1 lemon and 1 orange
- 1 tablespoon golden syrup
- 50 grams glacé cherries, halved
- 50 grams mixed peel apricot jam to brush over the cake
- For the Icing:
- 30 grams sugar
- 25 grams butter
- 20 grams lemon juice
- 110 grams powdered sugar
