"These berry crumble bars are made with a buttery shortbread dough that's used for both the crust and the crumble. In between is a creamy custard-like filling dotted with fresh blackberries and raspberries forming bars that are firm enough to eat with your fingers. These Mixed Berry Crumble Bars are the perfect easy treat for spring and summer. It's a simple recipe with minimal prep but big results. Each bite has sweet fresh berries surrounded by a firm custard like filling. The filling is kind of like a custard mixture but a little thicker. Not as dense as a blondie but thicker than a homemade lemon bar. The filling sets as it bakes, with the berries dotted throughout. I used blackberries and raspberries, but you could swap these out with other berries."
