Ingredients
- 8 6-inch flour tortillas
- 1 (21-ounce) can apple pie filling
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup water
- 1 teaspoon cinnamon
- vanilla ice cream for serving
Insructions
-
Preheat oven to 350º F. Spray an 8 x 8 inch bake dish with cooking spray.
-
On a work surface, lay out the tortillas and spoon about ¼ cup of the pie filling into the center of each. Fold in the sides, then roll them like a burrito. Lay the rolls, seam side down, into the prepared dish in two rows of four.
-
In a small saucepan over medium heat, stir together butter, both sugars and the water. Add cinnamon and stir until the mixture comes to a boil. Reduce the heat and simmer for 3 minutes.
-
Pour the sauce over the tortilla rolls and allow to stand for 45 minutes, spooning any excess sauce over the tops one or two times.
-
Bake the “enchiladas” for 25 minutes in the prepared 8x8-inch dish. Serve while warm with a scoop of vanilla ice cream on each serving.

These were really, really good! There was a savory undertone from the tortillas that paired really well with the apple pie filling. I'm a fan.
