    • 18 ounces apples
    • 1 tablespoon melted butter
    • 1 cup unsalted butter
    • 1 cup brown sugar
    • 2 cups milk
    • 1 large egg
    • 1 teaspoon vinegar
    • 2 cups whole wheat flour
    • 1 teaspoon baking soda
    • 1 teaspoon cinnamon powder
    • Pinch of salt

    Instructions

    1. Preheat oven to 350 degrees Fahrenheit.

    2. Brush a 12 hole standard muffin tin with melted butter.

    3. Whisk together butter and brown sugar.

    4. Add milk, egg, and vinegar.

    5. Whisk to combine.

    6. Scatter flour across batter surface, followed by baking soda, cinnamon, and salt.

    7. Whisk until fully combined.

    8. Stir in seeded, peeled, and minced apples.

    9. Scoop batter into muffin tin.

    10. Sprinkle with sugar.

    11. Bake for 20 minutes

    12. Rest in the muffin tin for 5 minutes then transfer to a rack to cool.
