Sicilian Pistachio Cookies
"Sicilian pistachio cookies are delicious, meltaway biscuits easily made gluten free. Green nutty stuff with egg white, they were fun to make, a bit like rolling balls of pesto, and they looked adorable raw. Baked, not so much. They spread obscenely, the decorative pistachio atop each cookie turned ugly brown colour, the icing sugar coating evaporated so I was not at all hopeful when I tasted the first one. Wrong, wrong, wrong: they are about the best thing you can do with only egg whites, nuts and sugar. Adorable – and so it’s confirmed again: looks don’t matter. Taste does."
