Carrot Cake
"Carrot cake is a staple in every respectable old-fashioned English tea room. I wonder who and how first conceived of putting grated carrots into a cake mix? Maybe it was serendipitous, a clump of grated carrots accidently fell into pound cake batter, and the cook, willy-nilly, baked the lot thinking to sling it out for the birds to eat. But it looked all right once out of the oven, so they tried a piece and went ‘you know what, this is not bad at all. This is really interesting. This is DAMN NICE!!!"
