- 3 Large Eggs
- 3/4 cup Granulated Sugar
- 1 teaspoon Vegetable Oil
- 2 cups Finely Grated Carrots
- 1/2 cup unsalted Butter
- 8 ounce Cream Cheese
- 1 cup Powdered Sugar
- 1 teaspoon Vanilla extract

Preheat the oven to 375°F. Line a jelly roll pan with parchment paper and spray with nonstick baking spray. Set aside.
