Ingredients
- 2 packages pre-baked mini filo shells
- 1 cup chocolate chips
- 1/2 cup pistachios, finely chopped
- 12 ounces ricotta cheese
- 1/2 cup powdered sugar
- 1/8 teaspoon almond or vanilla extract
- 1/4 cup mini chocolate chips
- 1/4 cup candied fruit or candied cherries, finely chopped
- 2 tablespoons pistachios, finely chopped

For the shells, melt chocolate chips and stir until smooth. Place chopped pistachios into a small deep bowl. Dip the top edges of each filo cup into the chocolate and then into the nuts. Set on a bake sheet and then brush insides of the cups lightly with chocolate. Let dry.

While cups are drying, combine ricotta, powdered sugar, and flavoring. Fold in chocolate chips, candied fruit, and pistachios into the cheese mixture. Spoon filling into the cups and chill until ready to serve.

I can't believe that this is a cannoli recipe but it doesn't have Marsarponne cheese! The ricotta filling was much too light and insubstantial for my liking. It tasted more like thin whipped cream.
