Notes

  • Use day-old French bread, challah, or any less-than-fresh bread you may have on hand. Leave on the crust and cut into 1-inch cubes.

Serves8

Ingredients

  • 5 cubed bread (see note)
  • butter, melted
  •
  • unsweetened applesauce
  • milk
  • packed brown sugar
  • beaten
  • vanilla
  • cinnamon
  • ground cloves
  • ground nutmeg
  • medium apple, cored, peeled and cubed (about 1 cup cubes)
  • Whipped cream and caramel ice cream topping for serving (optional)

Instructions

  1. Preheat oven to 350 degrees F. Spray an 8 x 8 inch baking dish with cooking spray.

  2. Melt butter and toss with the bread cubes. Arrange in a single layer on a cookie sheet and toast in the heating oven for about 10 minutes until just beginning to brown. Set aside to cool.

  3. In a large mixing bowl, stir together the applesauce, milk, brown sugar and eggs until smooth. Stir in spices. Add bread cubes and apple and toss to coat well. Pour into the prepared bake dish and allow to set for 30 minutes until bread has soaked up much of the milk and egg mixture.

  4. Bake for 35-40 minutes until the center tests done when a toothpick is inserted into it.

  5. Serve while slightly warm, topped with whipped cream and a drizzle of caramel sauce.

This wasn't as sweet as I would have hoped. More cinnamon would have been a great touch and perhaps more caramel. I did like the apples though. This would be a good breakfast dish.

This bread pudding was good but I would have preferred it to have more caramel and maybe some cinnamon.

The apples in this bread pudding were still too crispy for me when it was done baking. Next time I might cook the apples on the stove before putting them in the bread pudding so they're more tender. Otherwise, this was a good fall comfort food.
