Creme Brulee & Vegan Chocolate
"Creme brulee is a creamy, pudding-like custard with a brittle top of melted sugar that cracks when you gently tap it with a spoon. A palate pleaser to end a great savory meal. But, there are a number of records claiming that others first invented this rich and velvety dessert. Regardless of who were the inventors, it is a mouthwatering classic dessert; that you get to enjoy with this recipe."
NotesCoconut milk can be substituted for soy milk or almond milk. Crushed almonds are also a good addition to this dish. You can also roast the cashews to enhance the nutty flavor.

Ingredients
- 1 cup raw cashews (soaked overnight and drained)
- 1 cup water
- 14 ounces coconut milk
- 1 cup brown sugar
- 2 tablespoons arrowroot flour
- 2 teaspoons vanilla extract
- 1 ounce cacao butter
- 1 teaspoon salt
- 1 cup white sugar
Instructions

Combine cashews and water into a blender. Blend until combined.

Combine cashew mixture, coconut milk, brown sugar, arrowroot flour, vanilla, cacao butter, and salt in a small pot.

Cook the mixture in medium-high heat.

Whisk until well blended for 5 minutes.

Remove from heat and pour into the ramekins.

Cover and chill in the fridge until set.

Serve with your favorite fresh berries or fruit compote.
