Gingerbread Men Cake Mix Cookies

Ingredients
- 1 box spice flavor cake mix
- 1/2 cup flour
- 2 large eggs
- 1/3 cup vegetables oil
- 1/3 cup dark molasses
- 2 teaspoons ground ginger
- Assorted candies and icing for decorating
Instructions

Combine cake mix with flour, and ginger. Mix eggs, oil, and molasses in a small bowl and add with mixer running for 2 minutes, scraping down the sides. Cover with plastic wrap and refrigerate dough at least 2 hours before continuing.

Preheat oven to 375 degrees F.

Roll out the dough on a lightly floured surface to a 1/4-inch thickness. Cut with cookie cutters and place on parchment lined baking sheets, allowing 2 inches between cookies. Bake for 8 - 10 minutes until edges just begin to brown. Cool on a cooling rack.

I usually like my gingerbread cookies a little spicier or more ginger-y than this, but the delicious frosting made up for it by far. :)

Often, gingerbread cookies I've tasted are hard but these were not which made me like them even more. Perfect ginger flavor!

These gingerbread cookies taste just like Christmas. The flavor is perfect and the texture is slightly chewy--which is perfect for this type of cookie. Personally, I think the gingerbread women taste the best, but I won't decide for you. )
