Mini Blueberry Loaves
"Everything is better in mini form! These Mini Blueberry Loaves are easy and delicious…and they’re perfect for weekend breakfasts. This Mini Blueberry Loaves recipe makes 3 miniature loaves of blueberry bread. I’ve made this recipe in 1 larger baking pan, and it’s still tasty…but I swear it just tastes better when it’s baked in mini loaf pans! these loaves freeze beautifully! And they are the perfect size to pull out for a weekend breakfast. To freeze, just let the loaves cool fully and then wrap tightly in plastic wrap. Store the loaves in a freezer bag for up to 4 months. To thaw, place in the refrigerator overnight. I personally like this bread either at room temperature or lightly toasted in a toaster oven. If you don’t have a toaster oven, place slices on a sheet pan and broil on low for a minute or two. Add a cup of coffee, and you’ve got a fantastic breakfast!"
