My mom and grandma would always make me throw out the eggs if I scrambled them when making dessert. I had to start over until I got it right or we ran out of eggs, but that rarely happened. How did you find out you could strain the eggs and still use them? Did you just try it one day? I love eclairs, but I am partial to the original flavors, so I think a regular or French vanilla will be right up my alley.
