- 175 gram plain flour
- 1 teaspoon fine salt
- 2 teaspoon mixed spice
- 180 gram butter at room temperature
- 180 gram soft light brown sugar
- 3 eggs
- The zest of 1 lemon and 1 orange
- 1 tablespoon golden syrup
- 50 gram glacé cherries, halved
- 50 gram mixed peel apricot jam to brush over the cake
- For the Icing:
- 30 gram sugar
- 25 gram butter
- 20 gram lemon juice
- 110 gram powdered sugar
