Apple Pie Enchiladas

These dessert enchiladas are easy to make and require few ingredients. They are the perfect dessert to make if you are craving apple pie but don't have the time to make one from scratch. These apple pie creations have a homemade brown sugar cinnamon sauce that tops tortillas filled with apple pie filling. This dessert tastes wonderful when it is served warm with a scoop or two of good quality vanilla ice cream.

Whether you're bringing a dessert to a fall potluck or a simple summer cookout, this dessert mashup is a real crowd pleaser. There's nothing quite like it out there, and they're so much easier to make than you might think. Give them a try, and you just might have a new favorite apple dessert recipe.

Ingredients

  • 8 6-inch flour tortillas
  • 1 (21-ounce) can apple pie filling
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1 teaspoon cinnamon
  • __BLANK__
  • vanilla ice cream for serving

Insructions

  1. Preheat oven to 350º F. Spray an 8 x 8 inch bake dish with cooking spray.

  2. On a work surface, lay out the tortillas and spoon about ¼ cup of the pie filling into the center of each. Fold in the sides, then roll them like a burrito. Lay the rolls, seam side down, into the prepared dish in two rows of four.

  3. In a small saucepan over medium heat, stir together butter, both sugars and the water. Add cinnamon and stir until the mixture comes to a boil. Reduce the heat and simmer for 3 minutes.   

  4. Pour the sauce over the tortilla rolls and allow to stand for 45 minutes, spooning any excess sauce over the tops one or two times.  

  5.  Bake the “enchiladas” for 25 minutes in the prepared 8x8-inch dish. Serve while warm with a scoop of vanilla ice cream on each serving.
