(Sorry, you have to throw out the bourbon that wasn't absorbed into the pecans, it tastes bitter.) You'll also add just a bit more bourbon to the filling, but most of the flavor comes from the pecans. Some bourbon balls just add bourbon to the filling which gives a very harsh bourbon flavor. By soaking the pecans in bourbon you'll get a more subtle rich flavor."
